ohmygoodness, this soup. It's so wonderful how all you need is sweet potatoes and water and it's just heaven.
I seared a yellow onion with Tyler's chanterelles and a giant parsnip, then added water and two chopped up sweet potatoes to the pot, brought it to a boil for a couple minutes, added two beets, a little salt and pepper, turned it down to simmer until the potatoes and parsnips were soft, and done. So simple. So heavenly.
I made another pumpkin pie, and two sheets of pumpkin cookies, too. All sweetened with honey instead of sugar. Thanks, bees. The kitchen smells like magic. Dishwasher is running. I have dry laundry to fold. Was a good day.
